One dish dishes

I’ve become a big fan of “one dish” dishes for our weekday dinners. During my lunch break I spend 20-30 mins and put all the ingredients into a baking pan, the crock pot or a dutch oven. Just before I leave to pick up Pia, I put it in the oven and an hour later everything is ready. If it is something that requires the crock pot, I start slow-cooking it around noon. There’s only one dish to clean, which means we have more time for each other.

Pictured above is tonight’s dinner: those are six chicken drumsticks, some potatoes, red onion, garlic and lemon pieces. It is seasoned with some ground pepper, coarse salt and oregano twigs. I also threw in some bacon (two slices), because bacon makes everything better – right? There’s just a little bit of olive oil sprinkled over everything and the brown “sauce” is balsamic vinegar. It really smells delicious and I hope it tastes the same way. We’ll just have a small salad on the side. All in all, this costs around 6 dollars for the two of us (and there will be left-overs).

    Oh yummy! Sounds de-lish, looks it, and I’m positive, it tastes SUPER DE-LISH_US!!! No doubt in my mind that Pia will LOVE IT! Ditto on the bacon addition!

    I LOVE the idea of one pot dishes. I want a Crock pot. One of my one pot dishes is Thai green curry. Super easy and very little mess. Let me know if you want the recipe. Of course, the rice is another dish….
